Japanese green plum (Prunus mume) - the same fruit behind umeboshi. Naturally rich in citric and malic acid plus mume-specific polyphenols. Added in v4.1 specifically to balance the ginger note and add a refreshing plum-citrus character without artificial flavouring.
Mechanism
Prunus mume (Japanese ume, also known as the Japanese apricot or green plum) is the source of Japan's culinary umeboshi tradition. The fruit is unusually rich in organic acids - citric acid, malic acid, and succinic acid - giving it a distinctive sharp tartness. It also contains a class of polyphenols called mumefural, lignan glycosides, and chlorogenic acid derivatives that have been studied in vitro for antioxidant activity.
In the KōJō formula, ume powder is included primarily for sensory contribution - the natural acidity and aromatic compounds balance ginger's pungency and add a refreshing finish. The v4.1 formulation (March 2026) added ume specifically to address palatability concerns from v4.0 testing where ginger dominated the flavour profile.
